Fergal Egan, a Ballymaloe trained chef from Offaly has created an exceptional menu using seasonal Irish produce in the most unusual and exciting way. Try his Pan Fried Duck with Jerusalem Artichoke and Dark Veal Stock reduction with a starter of Burrata with Madeira Poached Pear Basil Emulsion and Balsamic Curd washed down with a bottle of Chateau de Santenay makes for the most perfect winter meal experience.
