Inspired by the city’s historical Saint Nicholas Claim House of 1854, Nick’s Quorum Bar & Supper Club is a modern bar and supper club in downtown Omaha. Serving brunch daily and dinner Tuesday – Saturday, the kitchen is led by Culinary Director Marvin Woods and the menu features fresh interpretations of supper club classics, from relish trays for the table to prime rib carved tableside. Our full bar is mixing up classic cocktails like our Brown Sugar Brandy Old Fashioned (made with spirits from local Brickway Brewery and Distillery) and playful recreations of after-dinner sippers like the Pink Squirrel and Grasshopper. Housed on the ground level of the Hilton Omaha, Nick’s Quorum draws inspiration from the original supper clubs in the Midwest (notice our “immediate seating available” sign) at the host stand.
Ever since the first caveman decided to slap a side of mammoth over the cave fire, man (and woman) has enjoyed the flavor of food cooked over a wood fire. At Timber Wood-Fire Bistro, all of our dishes are made from scratch using the highest quality ingredients. They are then cooked either over our state-of-the-art wood burning grill or in a brick oven heated by the embers of logs. Cooking in this way imparts a slight smokiness as it brings out the natural flavors of the food. A juicy ribeye sizzles and caramelizes, giving the tender beef a gorgeous crust. The homemade dough for our pizzas rises in the heat, and the crust gets to be the perfect combination of crisp and chewy. Vegetables share an entirely new flavor profile when cooked over wood.
