Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.

Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

We use organic and sustainable products whenever possible. Our menu celebrates the varied and complex flavors of classic dishes from Mexico City, Oaxaca, Michoacán and Puebla. Chef Olea brings these classic dishes to life with modern and New World techniques thereby imprinting his own distinct signature, or Sazón, into each and every dish. Menu items change with each season and can be customized to fit your needs. We also are happy to embellish the menu with entertainment, florals, linens, and unique décor.                                 Specialty cocktails were delicious. Service was slow, the restaurant was packed. The lightly battered fried shrimp were huge, seasoned nicely and tender. The blue crab soup is outstanding and a must try. Our entrees, sea bass in accompanying mole’ were good but pricey. We were advised that the portions were too small to split but they are not.

                                Gabrielle was amazing. She made our dining experience remarkable and unforgettable. The food was stellar the chefs creations were beyond delicious. Every dish was better than the previous one, which made it impossible to pick a favorite one. Thanks to the entire staff for making this our best dining experience ever.

                                Chef Olea and his team (Alycia) are absolutely amazing! The food is wonderful, unlike anything you’ve ever tasted. The moles are simply divine - we always get at least six jars to enjoy at home later. We’ve been to Sazon quite a few times; it’s one of our top destinations when we visit Santa Fe. Thank you, Chef!

                                Unfortunately, we were looking so forward to our reservation at Sazon based on all the fantastic feedback we have heard over the years, but it just didn’t meet our expectations. The ambience, lovely. The complimentary champagne toast and chef’s ice cream, lovely. The actual appetizer and dinner entree selection though, sub par. Especially for the price. Additionally our waitress had everything so scripted down to what amount of emphasis to place on what words, that it lacked individuality and personality. Instead, it was superficial and frankly annoying. The table was not level either and that shouldn’t be the practice at a restaurant that claims to be of a certain caliber. I’m so disappointed in saying this, but I’m not sure if we will return. If we do return, it would be the kind of place to sit at the bar and have a drink and appetizer/dessert.
