Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.

Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

We use organic and sustainable products whenever possible. Our menu celebrates the varied and complex flavors of classic dishes from Mexico City, Oaxaca, Michoacán and Puebla. Chef Olea brings these classic dishes to life with modern and New World techniques thereby imprinting his own distinct signature, or Sazón, into each and every dish. Menu items change with each season and can be customized to fit your needs. We also are happy to embellish the menu with entertainment, florals, linens, and unique décor.                                 From entering the restaurant the experience at Sazón was excellent. The food was amazing including the best soup we’ve ever had. Some very creative and unique dishes and all were excellent. Starting with the mole tasting was very cool. Our server, Nick, was excellent and made great suggestions and explained the dishes in detail. Absolutely a must try restaurant in Santa Fe.

                                I was quite disappointed in my dining experience. I found the wait staff overly officious and there were many menu "rules." Everything looked good on paper like the birthday card that greeted us on the table and the complementary dessert that was offered as a birthday gesture but ordering was very rigid. While offered a choice about which mole I wanted, when it came time to order I was highly discouraged from ordering the mole I wanted because it was not the chef's recommendation. I ended up not enjoying the dish because of the recommended mole. The complementary dessert was not one that my birthday guest could eat but we did not have a choice about which dessert they were giving us. In the end it went to waste. Im all for training people to provide excellent customer service but I felt like the wait staff were under a lot of stress and this contributed to an uptight dining experience. I will not go back.

                                One of the most enjoyable meals we have ever had. The service, setting and food was amazing. The mole tasting, chief’ soup and chief’s ice cream were unique and outstanding. Will definitely be back again.

                                The most incredible and caring staff. Ran by the best of the best people - not to mention the food was amazing. Would go back for the experience and service alone. Them having amazing food was just a bonus
