Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.

Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

We use organic and sustainable products whenever possible. Our menu celebrates the varied and complex flavors of classic dishes from Mexico City, Oaxaca, Michoacán and Puebla. Chef Olea brings these classic dishes to life with modern and New World techniques thereby imprinting his own distinct signature, or Sazón, into each and every dish. Menu items change with each season and can be customized to fit your needs. We also are happy to embellish the menu with entertainment, florals, linens, and unique décor.                                 Sazon is our favorite restaurant in Santa Fe, and it never disappoints. Their signature sampler of moles is a creative starter, any of which can later be paired with a choice of mains. The rest of the eclectic menu is Mexican modern. This visit we especially enjoyed the chef's sopa de amor. Service by the wait staff was excellent, with a shout-out to our waitress, Cathy, who couldn't have been more knowledgeable or friendly.

                                One of the two or three best restaurants in New Mexico. Chef was working the dining rooms last night—first time I’d seen him without his cowboy hat. There are dishes and flavors that can be found nowhere else in the United States. We’re from Texas and we know a bit about mole. No one matches the depths of flavors he is able to achieve. Trust your server—there are a couple of dishes that should be mandatory—Chef’s soup and his special dessert; your server will guide you. This is super-fine dining. Expect to spend several hours over dinner—it’s not fast food. Service is excellent and the rooms are beautiful. Plus, it’s not cheap. But, it’s special and worth the occasional splurge.

                                The food and drinks were unique, memorable and delicious but our server, Erica, really made the experience fun and special. She was engaging, helpful and gracious with great Latin flair.

                                It’s all good at Sazon. We brought friends who were celebrating a birthday and the loved it. The grilled stuffed eggplant was lovely, the duck and pork loin was a hit. Great cocktails and the chef is as charming as ever. Nothing quite it in Santa Fe.
