Guided by Chef Anthony Chittum, Vermilion stands committed to the growers, farmers, watermen and myriad purveyors of the Mid-Atlantic watershed. As a native of Maryland's Eastern Shore, Anthony brings an innate sense of place to each plate with an intractable reverence for local ingredients, and an aesthetic that allows these ingredients to shine.

The thoughtfully curated beverage program at Vermilion echoes this philosophy with an expansive offering of terroir-driven wines and a cocktail menu committed to seasonally-sourced ingredients. A sensational collection of over 150 fine whiskies, ryes and bourbons rounds out the experience and for many serves as reason enough to visit time and again.

    Vermilion’s Dining Room offers a seasonally-driven celebration of our Mid-Atlantic region and the myriad purveyors who call it home. Chef Anthony Chittum’s continuously evolving menus reflect the day-to-day seasonality of their work and serve as a love letter to the rich bounty this region provides. In addition to the a la carte menu, we're proud to offer the Farm Table tasting menu experience, a family-style three course option designed to showcase our menu in its entirety. For guests unable to access the upstairs dining room, we will happily offer this in the downstairs tavern and bar.

    Vermilion is always a treat! Our outstanding server Justin recommended his favorite high quality and thoughtfully prepared dishes and they did not disappoint. We are consistently pleased with the service and staff, innovative and delicious food, and an environment where no one has to scream across the table to be heard. What a gem!

    Overall, outstanding dinning experience. One of the best restaurants in the Washington DC area. Have been to Vermillion several times and will continue to dine there in the future.

    Excellent meal from start to finish. The food was beautifully presented and showcased the skill and talent of the chef/cooks. Enough cannot be said about the quality of the locally sourced ingredients and the restaurant's obvious commitment to making heartfelt food.

    Biggest issues 1) Pasta was over cooked. 2) Some items came out in the wrong order. 3) Nothing stands out as excellent. Appetizers were good. Free drink at beginning of meal. Dessert forgettable. Staff were friendly and helpful.

    We came for dinner for my wife’s birthday and were very glad we did. The service was impeccable, the cocktails were creative and enjoyable, and the food was outstanding.

    Fabulous experience at Vermilion. Food was delicious and service was outstanding. We had the farm table option and sampled variety of menu options. Everything was delicious and we enjoyed trying food we wouldn’t normally have picked.

    Excellent food. Had the rockfish and capers and new potatoes. Exceeded expectations. Service delightful. Would go back again and highly recommend to others.

    It was a pleasure to return to Vermillion after many years. The food was truly farm-to-table and delicious. Also enjoyed the cocktail list and wine choices. The only thing that detracted from the evening was the noise level. Even when not yet crowded, the ceiling (or lack thereof) in upstairs dining room does not buffer noise! Please address this for diners' comfort.
